We supply two types of sausage spice mixtures, fresh sausage
and cooked sausage. The fresh variety is intended to be mixed, cooked and used
as needed. The cooked variety is supplied with cure (Sodium Nitrite) to be added
in the mixing stage. These mixtures are intended to be pre-cooked in an oven
or smoker. These mixes contain an additive to aid the curing process.
